Cajun & Creole week - Part 2

Ramblings of the Chef:

Yesterday we covered 14 of the Cajun/Creole foods ... now it's time for the next 13. Remember there are actually about 1500 different items that are considered Cajun/Creole. 

As I was putting this together, it was so fun to see the different foods and how the "Formal" versions have been changed by a regional group. 

What I mean is that many of the names of a dish or process have acquired a new meaning because it is now associated with the Cajun or Creole version. 

This is not bad ... just interesting how things evolve over time. What a treat for us that this cuisine has had the time to perfect the flavors we have all come to love.
